Here’s a quick, easy and inexpensive way to make gourmet pizza at home. This pizza is reminiscent of the BLT pizza offered at California Pizza Kitchen. The tortillas (we used whole-wheat) are thin so they bake up crispy in the oven. Use turkey bacon and substitute spinach for lettuce for a healthier version.
This recipe is for four pizzas, which will serve two people.
Four eight-inch whole-wheat tortillas
1 1/4 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
6 strips cooked and crumbled bacon
4 Roma tomatoes, diced
1 1/2 cups chopped romaine lettuce
4 tablespoons mayonnaise
Preheat oven to 450 degrees. Place tortillas on a baking sheet and spread cheeses on top. Sprinkle bacon evenly over cheese. Bake at 450 degrees for about 8 minutes. Remove from oven and spread mayonnaise on the pizzas, then place tomatoes and lettuce on top. Cut into quarters and serve.
