
We love meals that only look difficult. This recipe for bruschetta chicken takes just a few ingredients, and the meal is made in a Crock Pot slow cooker for ultimate convenience. Put the ingredients together in the morning, and by dinner time, a tastes-like-home-made Italian meal is nearly ready.
You will need:
3 skinless chicken breasts
2 14.5-oz cans diced tomatoes
6 garlic cloves, sliced
1 cup chicken broth
2 teaspoons dried basil
Package frozen garlic bread
For garnish: 1 tablespoon fresh basil and 2 tablespoons grated Parmesan cheese
To make:
Add all ingredients except garlic bread and garnishes to Crock Pot and set on low heat. Leave to cook for 4-5 hours, or until a meat thermometer inserted into chicken reads 180˚F.
Then, bake garlic bread as directed on package. Slice bread, then place a chicken breast on each. Top with tomatoes and garlic, fresh basil, and Parmesan cheese, and serve.
